Subscribe to ALEXppresso: https://www.youtube.com/c/ALEXppresso?sub_confirmation=1 SOCIAL MEDIA LINKS INSTAGRAM: https://www.facebook.com/unsupportedbrowser TWITCH: https://www.twitch.tv/alexppresso TWITTER: https://twitter.com/alexppresso DISCORD: https://discord.com/invite/nHy8NQs TIKTOK: https://www.tiktok.com/@alexppresso?lang=en WRITTEN RECIPE INGREDIENTS 1 yellow onion, diced 1 red bell pepper, diced 3-4 cloves of garlic, minced 1/2 cup tomato sauce 2 tbsp salt 2 tbsp black pepper 2 tbsp smoked paprika big pinch of saffron threads 2 bay leaves 1/2 cup white wine 1 cup Spanish rice 4 cups broth (could need up to 5 cups) Toppings 4 cooked mussels 6 cherry tomatoes, halved 2 black olives, sliced 1 lemon, sliced into 6 wedges Optional Seafood - Shrimp - Scallops - Clams - Squid DIRECTIONS - Dice onion, bell pepper, and garlic - Preheat a large skillet (or paella pan if you have one) on medium heat - Add oil then add in the onions, bell peppers, and garlic - Saute for 5 minutes until onions are translucent - Add tomato sauce, salt, black pepper, smoked paprika, and saffron - Cook for 5 minutes - Pour in white wine. Cook for 10 minutes until most of liquid is evaporated - Add additional seafood if desired - Add Spanish rice and stir in - Throw in bay leaves and slowly pour in the broth and shake the pan to distribute broth and level the rice out - Reduce heat to medium low - Cook for 15-20 minutes, shaking pan occasionally - Add more broth if rice is seeming uncooked and keep cooking for a few minutes - Remove bay leaves and add the toppings - Remove pan from heat, cover with a lid and let residual heat cook for another 10 minutes - Garnish with lemon wedges
