Амарант – одно из древнейших южноамериканских растений, высоко ценившееся инками за питательность своих семян. Амарантовая мука придает выпечке легкий ореховый вкус, делает ее воздушной и позволяет долго не черстветь. Амарантовый хлеб отличается своей пользой, насыщенностью витаминами и что не маловажно великолепным вкусом. Ингредиенты: Форма – 26,5х11 см (по низу) 9 см (глубина) Пшеничная мука - 350 г Амарантовая мука 1 сорта - 150 г Вода - 410 мл Быстрые дрожжи - 5 г Соль - 13 г Тмин - 1 ч. ложка Кориандр – 1 ч. ложка Как приготовить амарантовый хлеб. Просеиваем амарантовую и пшеничную муку в глубокую чашу, добавляем дрожжи, соль, растёртые зёрна тмина и кориандра. Перемешиваем. Вливаем тёплую воду в муку. Замешиваем тесто. Я рекомендую замешивать тесто при помощи кухонного комбайна с насадкой «крюк». Затем при помощи скребка собираем тесто в шар, накрываем чашу крышкой или пищевой плёнкой и оставляем в покое на 1-2 часа. Тесто должно увеличиться в объёме минимум в 2 раза. Когда это произойдёт, перекладываем тесто в форму для выпекания, смазанную растительным маслом, накрываем полотенцем и оставляем подниматься ещё на 30-60 минут (зависит от дрожжей). Затем убираем полотенце и отправляем форму с тестом в духовку, разогретую до 200 градусов (нагрев верх-низ). Выпекаем хлеб 50 минут. Извлекаем хлеб из формы, кладём его на решётку и даём полностью остыть.
