Today's special is mutton bones-soup.

Those who feel that their bones are weak should try this

bones-soup for a few days. You will feel the difference.

The one I am cooking is a soup, similar to soup.

This has to be consumed hot. I am preparing it in a very healthy way.

Firstly, take an inch ginger and 10 garlic cloves.

Then take two to three green chillies.

Shallow grind them with a grindstone and keep aside.

Take half a kilo of well cleaned mutton bones and put them in the cooker.

Some folk use 30-50 grams of boneless mutton.

I am not adding it. You can add if you like.

Now add 750 ml water to these bones.

Add two tea spoons of salt and boil on high flame.

All the dirt in these bones will surface onto the top.

See, it has floated to the top within six to seven minutes.

By doing this, the soup will be clear and odour free.

Now add a table spoon coriander seeds,

two shallow-ground pods of cardamom,

two cloves, one inch of a stick of cinnamon,

one tea spoon of black pepper half of a bay leaf,

a hand full of coriander stems,

one litre of water,

shallow ground ginger, garlic and chilli paste,

one sliced onion,

and quarter tea spoon of turmeric to it.

Mix it well, put it on simmer and wait until six to seven whistles.

Then the bones will boil completely

and everything will start getting mixed well.

You can increase the quantity of the spices and make the soup more spicy.

I am cooking it so that it attains a very mild taste.

It can be consumed only as a soup.

After six complete whistles and after all the steam is evaporated

the bone marrow will soften.

Now, add another litre water and cook it on medium flame

for 40 minutes flat.

The bone marrow will soften completely and it will get mixed up in the soup.

and adjust the spices as per your taste buds.

Now take another pan and add 3 table spoons of cooking oil,

and one table spoon of ghee for flavour and heat it.

Now add finely chopped garlic,

and one finely chopped green chilli.

Then fry until the garlic turns brown in colour.

Frying the garlic until it turns brown in colour adds an amazing flavour.

While the garlic is turning brown,

add two table spoons of either sorghum flour or wheat flour or sesame flour to it.

Any one of those can be used.

Add half-a tea spoon chilli powder to it and fry it on low flame...

Be careful as it will burn if the flame is too high.

...until you smell a good flavour.

Now, take the completely boiled soup

strain it and add it to the fried flour mixture.

Almost 90% of the juice from the bones should have mixed with this water.

A few bones will still have the marrow.

Remove the empty bones as shown.

Add the ones which still have the marrow to the soup.

Throw away the remaing as it has nothing left.

Now allow the soup to boil on medium flame,

taste it and adjust the salt and chilli powder content in it.

Add a little finely cut coriander leaves to it before switching off the stove.

Serve it hot but after adding a dash of lemon juice.
