Рецепт приготовления эклеров - https://www.youtube.com/watch?v=ZslPmY3fMdU&t=1s Заварное тесто Мука - 150 гр. Вода - 250 мл. Масло сливочное - 100 гр. Яйца - 4 шт. по (65-70 гр) Соль щепотка Муку обязательно просеем. В кастрюлю добавим масло, воду и щепотку соли. Поставим на сильный огонь, ждем, когда растает масло. Жидкость не кипятим, чтобы вода не выкипела. Теперь нужно убрать кастрюлю с огня. Очень важно в один момент высыпать муку и сразу же интенсивно перемешивать. Очень хорошо растираем тесто, чтобы не было комочков. В итоге оно должно быть однородное и гладкое. Чтобы выпарить излишки влаги, снова ставим на средний огонь и продолжаем растирать тесто. Греем его со всех сторон, пока ко дну не станет прилипать мука. Выложим тесто в глубокую миску и снова перемешиваем, чтобы его остудить до 40 градусов. Тесто должно быть комфортной температуры. Теперь будем по одному вмешивать три яйца. Каждый раз тщательно перемешивая наблюдаем за консистенцией. Четвертое яйцо взболтаем в отдельной чашке и добавляем по немногу, это очень важно, так как продукты у всех разные, а нам нужно, чтобы тесто было не слишком густым и не слишком жидким. У меня ушло целое яйцо, и в итоге тесто получилось тягучее но не жидкое. Не рекомендую взбивать миксером, лучше проделать это в ручную силиконовой лопаточкой. Такое заварное тесто отлично подойдет для различных кондитерских изделий. Особенно для эклеров и профитролей, торта дамские пальчики. Приятного аппетита!
