Как приготовить свиную рульку по методу су-вид? Здесь мы используем для этого медленноварку Crock Pot SCCPBPP605-050(Slow cooker). Для приготовления рульки она отлично подходит. Во-первых, температурный режим LOW - это 60-65 градусов. Во-вторых, объем чаши здесь 5,7 литров и она имеет вытянутую форму - туда можно положить довольно большую рульку. Кстати, мощность Crock Pot всего 350 Вт. Поэтому Татьяна и заливает рульку кипятком. Для первого раза получилось неплохо, но можно отметить несколько характерных ошибок. Во-первых, при приготовлении по методу Су-вид нужно, что бы вода полностью закрывала пакет с продуктом. Стоило было налить больше воды. Во всех мультиварках и Crock Pot не исключение, рекомендуется наливать 3/5 объема, что бы исключить выплеск жидкости. Но при использовании вакуумных пакетов и низкой температуре это не произойдет, а мясо будет готовиться равномерно. Во-вторых, 10 часов для свинины это очень много. Нужно готовить максимум 4 часа, а потом можно подрумянить рульку в духовке. Правильное приготовление по методу Су-вид это, прежде всего, точное сочетание температуры и времени приготовления. Впрочем, рулька благополучно была съедена за праздничным столом и, говорят, очень понравилась гостям. Еще одна сложность с рулькой та, что она готовится на кости, которая со временем может порвать пакет. Так было и в нашем случае.
