like shrimp scampi but I do try to limit

my pasta intake there's lots of carbs

here this is a really really healthy

alternative it's just as delicious super

simple to throw together so stick around

and I'll show you how to put this dish

together so this is a dish that comes

together very quickly and it's important

to prep all your ingredients I'm gonna

start with the zucchini now I'm gonna be

using my spiralizer which I received as
00:00:32
a gift several months ago and I really
00:00:33
like using but if you don't have one of
00:00:35
these that's okay
00:00:36
most decent grocery stores do sell
00:00:37
zucchini noodles so it's really easy to
00:00:40
use this if you use a spiralizer all you
00:00:43
have to do is twist this right through
00:00:44
like so and here's what we're left with

after spiralizing three medium size
00:00:54
zucchinis i know it looks like a lot
00:00:56
this is really gonna cook down though
00:00:57
once it goes into the pan but what you
00:01:00
want to do next is you want to cut these
00:01:02
off there's any super long pieces you
00:01:04
just want to kind of trim them up a
00:01:06
little bit you don't have to be too
00:01:07
exact but I like to use kitchen shears
00:01:10
for this piece and next I have one pound
00:01:15
of wild shrimp that I've peeled and
00:01:17
deveined and blotted dry with paper
00:01:19
towels just want to season these on both
00:01:21
sides with some salt and pepper so I
00:01:30
flipped those and hit the other side as
00:01:32
well and I also have three cloves of garlic
00:01:35
that I've crushed in a garlic press one
00:01:37
large shallot that I've minced and a
00:01:39
large handful of fresh Italian parsley
00:01:41
also minced again very important to prep
00:01:44
everything before you begin the cooking
00:01:46
so what you want to do next is to get a
00:01:49
large pan and preheat it over
00:01:50
medium-high heat you want to make sure
00:01:52
the pan gets really really hot before
00:01:54
you add the oil so I'm gonna go in with
00:01:56
some extra virgin olive oil you don't
00:01:58
need a whole lot you just wanna get a
00:01:59
little bit in there swirl a little round
00:02:01
and then we can add the shrimp and it's
00:02:05
very important not to overcook the
00:02:07
shrimp you only want to sear these for
00:02:08
about a minute to in a minute and a half

on each side

okay and there wasn't quite room so I
00:02:15
have a few more to do in a second batch

but this is what you want them to look

like so what I'm gonna do is I'm gonna

start in that same corner working

outward and flipping these you just want

to give them a nice sear if you overcook

the shrimp they'll turn rubbery so you

just want to be very careful not to do

that okay and a minute later these look

ready so I'm gonna start removing them

from the pan from that same corner this

just guarantees even cooking and we just

have a few shrimp left that didn't fit

in I'm gonna throw these in next

minute later we'll give them a flip okay

now the shrimp was cooked on the other

side so what I'm gonna do I'm gonna turn

the burner all the way down to

medium-low and I'm gonna remove the rest

of the shrimp okay what we're gonna do

now is we're gonna add some cold oil to

that pan what that's going to do it's
00:03:23
going to immediately bring the
00:03:24
temperature down prevent us from
00:03:26
scorching and I'm gonna add in that

shallot as well as the garlic and then

you want to just move this around
00:03:36
constantly ought to prevent from burning

wanna be sure not to overcook it

and about a minute into the process you

can add the next ingredient which is a

large pinch of crushed red pepper flakes
00:03:50
so just get that in there and move

everything around just to incorporate

some of that heat into the oil and it

doesn't take long you want to be sure

not to burn the garlic so at this point

we're gonna deglaze with some Italian

white wine and I'm gonna turn the heat

back up to medium-high and we're gonna

allow this to come up to a boil and like

always you just want to keep stirring

everything constantly as it goes and all
00:04:20
you're looking for is that is for that
00:04:22
to thicken up a little bit that's how it
00:04:23
should look we've cooked off the alcohol
00:04:25
at this point we can add in the next
00:04:27
ingredient I'm gonna juice half of a
00:04:30
lemon I'm gonna turn the heat down a
00:04:36
little bit to about medium and at this
00:04:40
point I'm gonna add in about two
00:04:42
tablespoons of butter and we just want
00:04:44
to let this cook down until the butter
00:04:45
is melted okay and that doesn't take
00:04:50
long once that butter is almost gone we
00:04:54
can add in our zucchini noodles our
00:04:55
zoodles and these do not take long at
00:05:01
all to cook they only take about maybe
00:05:04
two or three minutes we really just want
00:05:06
to heat them through a little bit and
00:05:07
mix them around so
00:05:08
you want to get them in that oil and
00:05:10
butter sauce the scampi sauce just kind
00:05:12
of move them around like so until
00:05:14
they've cooked down and you just want to
00:05:19
be sure to season as you go so after you
00:05:21
add the zucchini you want to add a
00:05:22
little bit more salt and pepper just to
00:05:24
taste okay and after a couple minutes
00:05:29
the noodles are just about ready so I've
00:05:31
added the shrimp back in and we're just
00:05:33
gonna stir this around a bit to make
00:05:35
sure everything is hot and well
00:05:36
incorporated and we are just about ready
00:05:38
to serve this up I'm gonna turn off the
00:05:41
heat and just the very last ingredient
00:05:46
to add is that parsley just gonna add
00:05:48
that in off the heat and continue
00:05:50
stirring to incorporate our shrimp

about ready okay so here is the dish

The zucchini noodles, also known as zoodles, are a healthy alternative to pasta which means you can enjoy this dish guilt free! Join Eric from Simply Elegant Home Cooking as he walks through this recipe and breaks it down into simple steps. Ingredients: -3 medium zucchini -1 pound wild shrimp -2 tablespoons extra virgin olive oil -2 tablespoons butter -1/2 lemon -3 garlic cloves -1 shallot -1 large handful fresh Italian parsley -1/3 cup Italian white wine -1/4 teaspoon crushed red pepper flakes -salt and pepper to taste Directions: -Prep all ingredients before you begin cooking by peeling and removing the vein from the shrimp, crushing the garlic, and mincing the shallot and parsley. -If you did not buy your zucchini noodles pre-cut, use your Spiralizer or other tool to cut them into noodle shapes. -Pat the shrimp dry and season generously with salt and pepper. In a large pan, preheat on medium high and then add a small amount of olive oil along with the shrimp. Sear the shrimp for 1 minute on each side. -After both sides of the shrimp are seared, remove them from the pan, turn the heat down to medium low, and then add a little more of the cold olive oil which will bring down the temperature in the pan. Add in the shallot and garlic. Cook for about 1 minute, stirring constantly and taking care not to burn. -After 1 minute, add in the crushed red pepper flakes and continue to stir. -After 30 seconds, deglaze the pan by adding in the Italian white wine. Turn the heat back up to medium high and bring to a boil, stirring occasionally. Cook until the liquid reduces significantly in volume. -Reduce the heat to medium and juice the half lemon into the sauce, then add in the butter. Stir the scampi sauce until the butter is almost completely melted. -Once butter has almost disappeared into the sauce, add in the zucchini noodles. Stir them around well to incorporate. Add more salt and pepper if you desire. Cook for about 3 minutes. -Add back in the shrimp and stir to incorporate everything. Turn off the heat. -With the heat off, add in the Italian parsley and stir the shrimp scampi with zucchini noodles until thoroughly mixed. -Serve and enjoy!
